What Docker is
Docker packages an application and its dependencies into an image that runs the same way anywhere a container runtime exists. Compose describes a multi-service stack - app, database, cache - in a single file. Images are what most deploy targets actually consume.
How we use it
Every project we hand over has a Compose file that brings up Postgres and whatever else it needs, seeds it, and verifies the seed, so a new engineer is productive on day one instead of day four. The image built in CI is the image that runs in production, which removes the class of bug that only appears after deploy. Multi-stage builds keep the runtime image small enough to pull quickly.
Where it is the wrong choice
Containers are not a security boundary between untrusted tenants, and on macOS the virtual machine layer makes bind-mounted file I/O slow enough to hurt a large test suite. Code you do not trust needs a sandbox with a real boundary.
